Friday Favorites {#88}

Hello and Happy Friday! I spent all of yesterday thinking it was Friday, so I’m glad that Friday is actually, finally here!

I have so much to share this week! As always, I’m linking up with Andrea and Erika for this week’s Friday Favorites.

I shared in yesterday’s post about our trip to the orchard to get our pumpkins to carve. We were only there for a short period of time, but I’m glad we made it work!

Hadley was an acolyte for the first time last Sunday. It was sweet to see her take on this role.

Favorite Food(s):

Amy shared her Greek bowl recipe, and I had to try it. Y’all, this dish is so good. I’ve had it three times in the past week. When she says not to skip the homemade tzatziki sauce, she’s not kidding. Fun Fact: I hate yogurt, so I was worried that I wouldn’t like the sauce…it’s so good! So good. (I skipped the tomatoes and olives because I don’t like those. I’m kind of picky about some things 😉

I shared about this Pinterest Pumpkin Sugar Cookie recipe earlier this week. I made these on Sunday, and they didn’t last long at our house!

Other Faves:

Last Friday was so rainy and cool that we had the first fire of the year. Friday night was so nice. I was in my pj’s early (after the pumpkin patch), we had pizza for dinner, and I watched tv while enjoying a glass of wine. I went to bed pretty early too!

We had our “Spooky” dinner and carved pumpkins on Wednesday which are both favorite Halloween traditions.

Another favorite is seeing the kids do what they love…

Hayden has been having a good time with his new basketball team, and is really growing as a player. Also, I think he really is growing! Hadley doesn’t seem to be a head taller than him anymore!

Hadley had her first performance with her school dance team during halftime of the girls basketball game on Monday. Their routine was so fun, and she had a great time!

My favorite front yard trees are starting to show off! We have some rain coming through today, and I hope the leaves don’t all fall off. I want to enjoy this view for as long as possible.

It’s been Red Ribbon (Say No to Drugs) Week. Hadley has fully embraced the dress up days, and Hayden joined her on Tuesday…”I’m too smart for drugs…” Dress up in your favorite college shirt or your favorite career clothes.

Hadley and friends were so cute on Wednesday…”Travel with your pack drug free.” You and your pack of friends dress alike. Doesn’t every tween girl have black leggings, a black t-shirt, and a colorful tutu on hand?!?

It’s been fun seeing her excited about all of these middle school activities.

Also, Hadley and a couple of friends went to the Fall Festival at her friend’s church on Wednesday. They had lots of fun, and she brought home some candy!

I think I probably share these around Halloween every year, but I always get a kick out of looking back on what the kids were each year.

Seriously, Hayden still doesn’t know what he will be this year because I keep saying no to “killer clown!”

Pumpkin Patch Trip and More!

Hello! Today, I’m sharing one of my favorite posts of the year: a recap of our trip last week to the orchard to get our pumpkins + a bit more pumpkin fun.

This meme is me every year:

We never leave the orchard without spending less than $70 on pumpkins, donuts, cider and more!

We usually go to Evan’s Orchard in mid-October, but Travis was busy working, and we had friends in town. I decided to give it a shot right after school last Friday. Even though the weather looked gloomy, I still figured it was our one chance to go. To be honest, there are many years we’ve been so hot at the pumpkin patch, so I was happy to actually have to wear a jacket!

We arrived right around 4:30 and headed straight in to get our donuts and hot apple cider.

I always love the chairs and mums as we enter the store.

Besides the donuts and cider, Hayden (and Travis) couldn’t resist the buy two get one free fudge! We ended up with peanut butter, chocolate, and cookies and cream fudge too.

With our hot apple cider in hand (we needed it!), we walked over to the pumpkins.

Then, I saw a mom propping her kids up on the pumpkins, and I said, “Oh…I remember doing that with you all!” I then turned around to find Hadley lounging on the pumpkins saying, “Take my pic!”…followed by…

“Hayden, sit on the pumpkins for mom!” She gets me 😉 and even dressed appropriately for the pumpkin patch in her favorite fall sweatshirt!

We wandered around for a bit. Evan’s Orchard has a couple of displays for photo ops, and the kids obliged for a photo at this one. We usually get a family photo, but honestly there weren’t many people there to ask, and the wind was blowing!

They picked out their carving pumpkins, and then…

And at precisely 5:15, we were back in the car!

It was a quick trip, but I’m glad we did it.

While there are times I’m sad about the fact my kids are growing up so quickly, I’m also embracing that we didn’t have to spend two hours on the slides, climbing hay bales, and feeding animals in the petting zoo. Those things are fun, but I’m happy that they are content with the scenery, the goodies, a few pics, and picking out the pumpkins.

Bonus! This was my breakfast over the weekend!

Speaking of pumpkins…

The kids painted pumpkins on Tuesday night with a few friends. These are porch pumpkins that will be delivered to some of our church members.

Then, last night, we had our “spooky” dinner of bloody finger hot dogs, green grape eye balls, and macaroni and cheese brains.

After that, the kids carved their pumpkins.

Of course, this has been the case most years 😂:

But, for the second year in a row, they were able to do most of the work! #andallthemamassaidamen

This week sure has been full of pumpkin fun!

Pumpkin Sugar Cookies

Today, I’m sharing one of our favorite fall sweet treats!I I stumbled upon this Pinterest recipe a few years ago, and now I make a point to bake these cookies at least a couple of times each fall.

Ingredients:

  • 3 cups all-purpose flour
  • 2 tsp corn starch
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • 1/2 c unsalted butter, softened
  • 1/3 c unflavored vegetable shortening
  • 1 1/4 c granulated sugar
  • 2 large egg yolks
  • 2/3 c canned pumpkin puree
  • 1 tsp vanilla extract

Instructions:

  1. Preheat over to 350 degrees.
  2. In a mixing bowl, whisk together flour, cornstarch, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger and set aside.

3. In a bowl, using a mixer, cream together butter, shortening and sugar until fluffy.

4. Mix in egg yolks one at a time. Mix in pumpkin puree and vanilla extract.

5. Slowly add in dry ingredients and mix until combined.

6. Scoop dough out and shape into 3 Tblsp balls. Place on parchment paper lined baking sheets. (The recipe says to slightly flatten cookies, but I don’t do that.)

7. I roll them in sugar even though recipe doesn’t call for it.

8. Bake in preheated oven for 11-12 minutes.

9. Cool on the baking sheet for several minutes and then transfer to a wire rack to cool completely.

10. Icing:

I take a short cut and just buy vanilla frosting. After I frost the cookie, I sprinkle it with pumpkin spice. Delish!

We are big fans of pumpkin around here…pumpkin bread, pumpkin pie, and pumpkin sugar cookies!

Tuesday Teacher Talk

Hello!

Well, a big part of my life (for almost twenty years!) has been being a teacher. It dawned on me that I haven’t shared much about that aspect of my life, and a few readers commented on my recent Three Things post about my current Academic Interventionist job.

So, today I’m taking a stroll down memory lane and sharing my teaching experiences through the years in my first ever…

My first year of teaching was in a small school outside of Columbia, Missouri. I graduated from MIZZOU in May of 2002 and wanted to stay there a bit longer (and I was dating Travis at the time). I taught in a very small school where I was the only English 1 teacher. I had ninth graders all day long (I was more energetic then ;). Fun Fact: I was also the cheer leading coach that year. While I may have had more energy, I’ve never been described as peppy. The coaching position was attached to the English 1 teaching position which I actually don’t think you are allowed to do! Ahhh…small town life. Anyway, I enjoyed my time there. One funny memory I have is that one day I wore two different black shoes to school…both had a bit of a heel. It was a day the cheerleaders had to stay for the basketball game, and I just remember wanting to get home and out of my mismatched shoes!

The time came where Travis wanted to move back home to Kentucky and get into the horse business. While we were serious and had discussed marriage, I just didn’t feel like I could move to Kentucky yet and he wanted to get settled with a job. So, I took this opportunity to move back home to KC. I taught at large high school with a diverse population, and my mom taught at the middle school that was a feeder school to where I taught. Since I wasn’t married at the time, some of her students got a kick out of the fact that they had Mrs. Galvin in 7th grade and Ms. Galvin for 9th (or 11th) grade since I taught both of those grade levels that year. I also had the school newspaper as a class and loved it! They were a great group of kids. I loved being closer to my family, making more money, and being in a bigger school. My mom retired at the end of that school year right as I made the decision to move to Kentucky with Travis.

We got engaged in May of 2004 right as I found my job in a somewhat rural district in Kentucky. Nicholasville is right outside of Lexington and is a great community. There are two high schools in the district, and I loved my time at East. I taught English 1 for many years. I was blessed to work for the same four principals for 11 of my 12 years there. They were amazing principals and great leaders for our school. During that time, so much changed in my life. I got married, had the kids, and met some of my best friends. It was also during that time that I earned my two Master’s degrees. In the fall of 2005, right after I got married, I started on my Master’s in Literacy. I earned the degree online over the next two years from the University of Missouri. I have always loved the literacy part of teaching English, and especially the reading aspect.

With that degree, I earned my Rank 2 in May of 2008 which led me to a Literacy Coaching position at East. Our district was a part of a four year grant with the University of Louisville. During that time, I did reading intervention with students. I typically had two classes of freshmen and one class of sophomores. Because it was a grant, the boundaries of those classes were dictated by the stakeholders, and I couldn’t have more than 12 in a class! The other half of my day was spent being a resource for teachers. I worked 1:1 with students, I shared strategies with teachers, I facilitated professional development opportunities and more!

Also, with the grant was the opportunity to earn a Reading Specialist degree. I put that off for a bit because it was optional, and I had a lot going on. Finally, I started that degree when the kids were two years old and worked hard for a year to complete my 36 hours. It was definitely a crazy time, but I knew I’d kick myself if I didn’t take advantage of earning this degree, and it was paid for by the grant. In May of 2012, I finished that degree and earned my rank 1. When the grant ended, I went back into the classroom and taught mostly juniors and seniors. While at East, I also took on other roles as teacher rep on SBDM and splitting the English department chair position for a few years. The year my kids were in kindergarten, I knew I needed a change. As much as I hated to leave, I needed to be on the same school district schedule as them, and I was unhappy with the new administration at my school. So, I looked, applied, and interviewed; I was able to secure a teaching position at a school in Lexington.

I now teach at one of the largest high schools in the state. It actually reminds me of where I taught in KC. I taught English 2 for the first time ever when I moved to this school. I taught sophomores the first year, then the second year I had sophomores and two MTSS classes for students who hadn’t met benchmark on the English or Reading sections of ACT. We did other things like reading strategies, study skills, test taking skills and more. The next year, I had sophomores and one class of freshmen! Blast from the past! They were actually a great way to start my day. Then, there was a job posted for a reading interventionist at my school which I applied for and got the job in late October 2019.

My job title now is Academic Interventionist. It feels like I’ve been doing this job forever, and it also feels like just yesterday I made the switch. This position was created because we needed extra support for students, especially freshmen. I started by checking in with students who were struggling in their classes, and provided some support for them. Sometimes that meant study or reading skills, other times I helped them complete work, and there were times we’d empty out backpacks and get organized!

I’d barely started that work when in March of 2020, everything changed. During the pandemic and virtual learning, I still helped students…just via Zoom. I’d also make lots of phone calls home to check on students and set up appointment times to work with them.

Crazy enough, this year is the first “normal” year I’ve had in this Academic Interventionist position. We’ve been able to expand how we help our students. Thanks to additional funds, we’ve added more teachers and are now a team. I now focus on Social Studies and English classes because there’s a new counselor to now focus on students who are struggling overall academically, and there’s a science and math interventionist as well.

What I love about this job is meeting new students, and every day is different. I have a Google form, and teachers add students to it who need additional academic support. Some days, my room is a quiet place for a student to take a test, other days I’m reading chapters of Of Mice and Men aloud to a few students and then we answer questions, I help students brainstorm ideas for their paper and then complete an outline, and I also encourage students to use reading and writing strategies. I help students 1:1, pairs, small groups and even half of classes. I’m also an extra resource as I sometimes go into classrooms on days when teachers need an additional teacher when giving a test or sharing new content.

I’m also on various committees such as MTSS (academic support for students), PBIS (behavioral support for students), and 9th grade Task Force (helping plan intentional strategies and help for our 9th graders).

I hope this job lasts as long as possible. I love it. Unfortunately, in education, the funding for these positions doesn’t always last forever. That being said, this job has been just what I’ve needed at this point in my career to have some flexibility in my day (sometimes, in education, you feel like you are stuck in a rut!), help students in a different way, and use some of my other teaching skills and credentials.

Shew! That was a long post. I guess when you’ve been teaching twenty years, you have a lot to recap! It’s really crazy to me that I’m 2 / 3 of the way finished with my teaching career. I swear I still remember what it feels like standing in front of my first hour class on my first day of teaching in 2002. Time flies.

Monday Memes

Hello and Happy Monday! Well, the weekend sure went by quickly. We had a good mix of being busy and having some downtime. We were able to make it to the orchard to get pumpkins (and apple cider donuts) after school on Friday. Then, Hayden had basketball games Saturday and Sunday. We also spent time baking cookies, having dinner with friends, and going to church. I will share more details later in the week, but for now I’m sharing memes that made me laugh this month!

Friday Favorites {#87}

Hello and Happy Friday! This week has felt like an eternity, but it’s been a good one. I swear it was Wednesday before I felt like I’d caught up from our busy weekend, and now we’re ready for another weekend! I’m not mad about it!

Of course, I’m linking up with Andrea and Erika for this week’s Friday Favorites.

Favorite Photo:

There’s nothing better than Keeneland in the fall. We had so much fun with our friends (old and new) last weekend. I was worried it would rain, but the weather turned out to be perfect!

Favorite Moment:

We celebrated the kids’ 1st quarter report cards with the “You are Special” red plate a couple nights this week. We all weren’t sure what to expect with the first quarter of middle school, eight classes, and then being out for Covid/quarantine for two weeks. We expect A’s and B’s, and the kids delivered. Not going to lie…there were a couple of days they had to play major catch up with some missing work, but lessons were learned (literally and figuratively), and they pulled out great first quarter grades.

Favorite Clothing Item:

I have a couple of new favorite clothing items. I saw these boots from Walmart shared on Instagram, and I decided to buy them. I wore them twice last week. Once with this skirt, and new top from Target (I got it in gray and burgundy!), and then also to Keeneland paired with my dress from Amazon (seen in photo above, affiliate link).

*About the boot pricing: For quite a while size 9 were $40. All the sudden, the price, for size 9 only jumped to $70! I sized up to a 9.5 to get the $40 price, and they fit fine. Now, I see that size 9 are $52 while all the other sizes remain $40! Not sure what that’s all about, but I do love them, and I know I will wear them a lot.

I’m also loving this mock turtleneck sweater from Target. I bought it in this pretty coral color, and I wore it to school yesterday!

This or That: Halloween Edition

Hello! How’s your week going? So far, so good for us!

Shay shared This or That: Halloween on Insta Stories, and I thought it was so festive and fun.

Here are my answers!

  • Vampire or Witches: Witches would be my choice. One of my favorite Halloween costumes when I was a kid was when I went as a witch!
  • Sour or Chocolate: Unfortunately, I have quite the sweet tooth, so chocolate all the way!
  • Apples or Pumpkins: Uh…how many pumpkins is too many pumpkins? The only way I know how to decorate for fall is to just put out more pumpkins!
  • Trick or Treat: See above when I said I have a sweet tooth. Definitely treat! I have a candy stash at school for my students, and I try to be good and not treat myself too often.
  • Snickers or Kit Kat: Honestly, I love both, but I do love a Snickers….especially if it’s been in the fridge.
  • Scary Movies or Scary Books: Scary books over scary movies for sure. I love a good thriller!
  • Costume or Graphic Tee: How about both? Graphic tee (or sweatshirt) for me, and costumes for the kids.

I just purchased this sweatshirt recently from EverlyGrayce Etsy Shop, and I love it. I wore it last Friday to school, and got so many compliments. You can’t be the price tag either!

Costumes for the kids through the years…

  • Chili or Soup: Again, both! But if I had to choose, then chili. I make chili pretty often whether it’s the Major’s chili or Chicken Chili.
  • Casper or Hocus Pocus: While I like both movies, Casper is so cute!
  • Skittles or Sour Patch Kids: My kids love Sour Patch Kids, and now I do too. They get them pretty often, and I always ask for a few!

How would you answer this or that? What’s your favorite thing about Halloween? Less than two weeks, and my kids still don’t know what they are going to be. Oh how times have changed…

Tuesday (TV) Talk: The Real Housewives

Happy Tuesday! Shew! Yesterday was the longest Monday in the history of Mondays! I felt like I was moving in slow mo all day with a to do list that was a mile long.

It’s the third Tuesday of the month, so I’m linking up with Ashley and Erika for this month’s Tuesday Talk.

Tuesday Talk is all about whatever topic we want to write about. Well, riveting content here…but today’s topic that I’d like to discuss is….The Real Housewives…

I love this show. It’s a guilty pleasure of mine. I find myself loving different seasons for different reasons. Here’s my order of favorites for the different franchises (counting down to my #1 fave):

#5: New Jersey

I’ve been watching since the first season when Theresa flipped the table! While some of the seasons can be a bit too dramatic for me, this series holds my attention. I like the dynamic between the characters, and I think I’d want to be friends with Dolores, and would have fun hanging out with Melissa and Margaret!

#4: New York

Ok…New York used to be such a favorite of mine. Well, I realized why it was really a favorite: Bethenny Frankel. Since she wasn’t on this last season, it’s been a dud for me. Actually, somehow I missed the entire last season, so I’ve been playing catch up, and I just don’t think this cast works together. I will say I still love Sonya and think she’s a hoot!

#3: Potomac

I’m enjoying the current Potomac season. My favorite duo is Robyn and Giselle! Just when I thought Candiace was so extra, insert Wendy! She’s next level this season. Monique isn’t in the cast this season, and it was probably time for her to go. Last season was so much with the physical altercation with Candiace. I do look forward to seeing how this season shakes out.

#2: OC

I’ve always been a big fan of the OC housewives. The past couple of seasons have been different without Vicki and Tamra, and I do miss them. They were always so fun to see hang out with Shannon. I think this upcoming season is without Kelly and Brandwyn, so I’m not sure who replaces them?! The OC franchise is the OG of Real Housewives, and they always have a fun crew for a cast.

…and #1: Beverly Hills

Beverly Hills has always been my favorite! Lisa Rinna is a freaking queen! She’s the best, (hunny!) I always think that I’d want Kyle as my friend, and her sister Kathy is on this season which has been everything. Kathy Hilton is the best. I think she’s funny without meaning to be funny, but who knows?! I love Garcelle; I think she has a kind of quiet confidence. I like Crystal this season. She’s kind of in the background a bit, but I feel like she shares more about herself as she feels more comfortable. I’ve always been in intrigued by Erica, and this season with all the issues surrounding herself and her (almost ex) husband have obviously been a hot topic. It’s been interesting to see her navigate her “lifestyle change,” and I feel like she leans on the ladies more than I thought she would. Sutton’s a little too proper and needs to loosen up a bit. Dorit is a bit much as well. I’ve always thought these ladies go on the best trips, and I love seeing their day to day lives as well.

The Beverly Hills series is the one I watch in as close as real time as possible. With some of other cities, I miss a few weeks before playing catch up, but not with the BH ladies!

Other Cities and Thoughts:

Through the years, I’ve watched them all. Real Housewives DC only lasted one season, and I liked it just fine. I was kind of surprised it wasn’t renewed.

I watched a couple of seasons of Miami, and couldn’t get into it. It was eventually cancelled anyway.

I’ve missed entire seasons of ATL and will just sometimes pick up with a current season, but I don’t feel like I’m missing much.

I did watch the Dallas seasons, and thought this past season was the best yet. That being said, I’m not surprised it was cancelled. The girls just seem to do silly things and are even kind of crude at times.

Salt Lake City is still too new for me to know how I feel. I think season one was shorter than most, so maybe they were just testing it out. Season two has been fine, and I’m interested.

I love the reunions at the end of the season when they break down the seasons and dig a bit deeper into everything that’s gone on. There’s usually a screaming match or two, and “receipts” are always shown 🤣

I’m not too ashamed to to admit that I watch these shows because I do a good job balancing out my free time with reading as well 😉What about you? Do you watch any of the Real Housewives? If so, which one is your fave?

Weekend Wrap Up

Hello and Happy Monday! How was your weekend? We had a super busy one, but it was great. I have so much to share, so here are the details in the Weekend Wrap Up.

I had a few errands after school on Friday before my friends came to town from St. Louis. My friend from college, her husband and another couple were coming to Lexington after making a few stops at distilleries on the Bourbon Trail.

They came over for a bit before we headed out to dinner at one of our favorite Lexington restaurants: OBC Kitchen. Hot off the Bourbon Trail, we took them to Old Bourbon Country Kitchen. 😆 . The bar is quite impressive!

Keeneland!

My friend, Leslie, had been with me to Keeneland a couple of times through the years, but her husband and friends had never been to the horse races. Well, we came out of the gate hot ….one of Trav’s clients had a horse in the first race who won! So, we ended up in the winner’s circle after only a few minutes at the track.

Unfortunately, our Saturday was pretty booked because Hayden had state cross country. Travis left after the second race. I hung with our friends a bit longer and showed them around Keeneland. I left after the fourth race to get to Hayden’s meet. Our friends stayed a few more hours and enjoyed their time at the track. The weather was beautiful, and they got the hang of betting! 😉

We had so much rain on Friday that we didn’t know how the course conditions for the cross country meet would be, but they were pretty good. Hayden ran a great race, and he was happy with his finish.

This is my favorite photo of the cross country season. Travis has been Hayden’s #1 supporter these past few years as his elementary coach, and continuing to work with him this year during his first middle school season. There are some mornings when Travis helps Hayden with workouts before school, and he certainly coached him during our couple weeks of quarantine.

We are always proud of his effort, but I know Hayden had to dig a bit deeper and push a bit harder while still feeling the lingering effects of Covid. Now, Hayden will continue to train with a running club the next few months.

Saturday night, we had our friends over for pizza and to watch football. It had been a long day, and, well, we aren’t 22 anymore! 😂

On Sunday morning, our friends stopped by with donuts, and then we headed to Trav’s farm, so he could give him a tour.

They saw some stallions,

some mares in foal, and some yearlings.

It was a beautiful morning, and Kentucky was showing off.

We’ve been friends for over 20 years!

They headed back to St. Louis, Travis stayed a work a bit longer, and I headed home.

Once I got everyone settled, I watched some Netflix. I read the book Maid last summer, and it it a book I will never forget. I was excited to start the series, and ended up binge watching three episodes throughout the day.

Then, I headed to Hayden’s basketball game. He’s had a handful of games so far this season, and this is the first one I’ve been able to attend. Shew–we’ve moved up to big boy basketball! It was fun watching them play, and Hayden did great.

Then, it was time to head home, have dinner, and help the kids finish up some school work! Now, we’re ready for the week.

I feel like I need a weekend to recover from the weekend! That being said, the weather was beautiful, and the company was even better!

Friday Favorites {#86}

Hello and happy Friday! This week has been filled with school, activities, and a few other favorites.

After a busy week, I’m going to get right to the link up with Andrea and Erika for this week’s Friday Favorites.

I’ve ordered my favorite fall Starbucks drink a couple of times recently. I love a London Fog.

Our first post-quarantine activity was seeing Jungle Cruise over fall break. I’d been wanting to see it since the summer, but we never had time. While I was bummed we had to change our tentative Fall Break plans to go out of town, it was nice to be home and have time to do things we don’t normally have time to do.

This movie was so cute and fun, and I’d definitely see it again. We went to our favorite theater with the reclining chairs and full food menu. We all had our fill of popcorn, slushies, and candy. The kids were able to bring friends which was an added bonus!

I made my favorite fall recipe this week: Pumpkin Sausage Penne Pasta. It’s a family favorite this time of the year.

Over break, Hadley and her friend had time to take a babysitting class at the Y. They had a great time and passed the test at the end of class! (Later that evening, Hadley gave me her UK bead necklace to hold and reminded me that it’s a choking hazard for little ones! 😂I guess she was listening at the class!)

The CATS being 6-0 is definitely a favorite, especially for Hayden and Travis. We all tailgated on Saturday, but Travis and Hayden went to the game. They had lots of fun!

I had to reschedule my hair appointment due to our Covid issues, but I was so happy to see my hair girl on Sunday. There’s nothing better than a fresh cut and color!

The kids in October 2010 is such a fun memory. They used to scoot all over the house in these cars. Hayden has always been the more cautious kid 😉
