Pumpkin Everything

Hello!

Well, well, well…it’s officially my favorite month of the year.

This is now my screensaver on my phone….it makes me so happy.

In honor my favorite month, which always makes me think of pumpkins, I’m sharing some of my favorite pumpkin recipes.

Pumpkin Faves:

When I think of Thanksgiving, I think of pumpkin pie. That being said, I try to at least make a pumpkin pie two or three times in October and November.

I’m team cold pumpkin pie (with a dollop of Cool Whip)…what about you?

Hadley loves to bake as much as I do, and we make these Pumpkin Sugar cookies.

I just buy a tub of icing and then sprinkle some pumpkin spice on the cookies.

Hadley and I made Pumpkin Crinkle Cookies recently, and they hit the spot!

If a kid hands me a fundraising sheet, and I see a Pumpkin Roll, I’m done. Sign me up.

Kroger also has them which is dangerous!

I made Shay’s pumpkin cake the past couple of years. Unfortunately, I can’t find the recipe to link up, but I’m pretty sure I used spice cake mix as the base…and a tub of frosting with a sprinkle of pumpkin pie spice.

Pumpkin Sausage Penne Pasta is a family favorite in the fall for sure.

Trader Joe’s:

Of course, Trader Joe’s as all kinds of fall goodness, but my two “must haves” in the fall are:

Trader Joe’s muffin mix. It comes in so handy for pumpkin bread…

…or muffins.

The kids and I devour these for breakfast this time of the year. I love a pumpkin muffins with a cup of coffee on the weekends.

For as long as Trader Joe’s has them in stock, you’ll find Hadley having a pumpkin bagel and pumpkin cream cheese for breakfast. I usually have half a bagel a couple times a week for a snack!

My mom told me she’s tried this butter, and it’s so good.

I’d like to try:

I “pin” recipes on Pinterest pretty often, and have a “fall recipe” board. A few recipes I’d like to try over the next couple of months are:

  1. Well, hopefully we can still be friends, but I am not a fan of pumpkin. 🤣 I want to love it so much that I keep on trying it to make sure, but it is always the same. The closest I have come to loving it is in a muffin mix I made up- I use a spice cake mix and instead of using eggs, I add a little bit of pumpkin and mini chocolate chips. I make my own cream cheese icing and it’s DELICIOUS. I did also recently have a pumpkin pie latte- and it was pretty good. I bet we would like that penne dish! I may have to try it, or I may make some chili and add it to the recipe. October is my favorite month! I think even more than December. I hope you have a great day!

    1. We can still be friends 😂 know people either love or hate pumpkin. I want to love December and love the magic of Christmas and the glow of tree lights but it always seems so stressful. Your muffin mix sounds so good.

  2. Yes! Don’t forget about Pumpkin fluff dip with vanilla wafers or graham sticks! I like Carolina Charm’s recipe. I am also team cold pumpkin pie with Cool Whip. Oh man – a piece for breakfast the next day!
    I am gonna make your pumpkin pasta for Erica and I but lighten it up a bit. Or, I am gonna attempt it. I tell you – those back of box Kroger recipes and Kroger flyer recipes are pretty darn good, right?
    I made my best batch of mini pumpkin muffins ever this year. One box spice cake mix, one can pumpkin, a bit of water, and chocolate chips. I think the addition of the water was good and it was the moistest muffin ever. I put most in the freezer and I can say that they also freeze well! Spice cake mix is where it’s at!

  3. I absolutely love pumpkin pie – cold with cool whip! No one else in my family really likes pumpkin anything, so I don’t eat as much of it as I’d like. Great idea for a post!

  4. I am not a fan of pumpkin pie but I do enjoy pumpkin in other things… like our pumpkin mac and cheese or pumpkin chili. We have made pumpkin muffins and pumpkin spice donuts but I don’t know that I have a favorite pumpkin recipe. I do like to constantly try pumpkin/fall recipes I find online though.
